 OATMEAL COOKIES
 


(Yields five dozen cookies)

½ cup canola oil 1 tspn baking powder
½ cup sugar ¾ tspn baking soda
2 tblspns molasses ¼ tspn salt
½ cup firmly packed ½ cup old-fashioned
brown sugar oats, uncooked
2 tblspns Just Whites 1 ½ tspns finely
whisked with 6 tblspns grated lemon peel
warm water Vegetable cooking
1 tspn vanilla extract spray
2 cups all-purpose flour

 

  1. Preheat oven to 350° F.

  2. Blend oil and sugars.

  3. Add Just Whites and vanilla; mix well.

  4. Combine flour and next 3 ingredients, stirring well. Add flour mixture to creamed mixture. blending well. Stir in oats then chill for at least one hour.

  5. Roll into tablespoon size balls, and place 2 inches apart on cookie sheets coated with cooking spray. Bake at 350°F for 13 to 15 minutes.

  6. Remove from cookie sheets, and let cool completely
    wire racks
