| CHOCOLATE
PUDDING |

(Yields eight servings)
2 (1-ounce) squares of Unsweetened chocolate
3 ½ cups skim milk, divided
½ cup sugar
¼ tspn salt
2 tspns Just Whites
1 ½ tblspn cornstarch
2 tspns vanilla extract
- Melt chocolate in a heavy saucepan over
low heat.
- Gradually add 3 cups milk, sugar and salt,
stirring constantly with a wire whisk. Cook over medium-high heat
until rolling boil, stirring constantly for approximately 7 minutes.
- Add Just Whites to remaining ½
cup (warm) milk and let sit for 2 minutes or so. Add the cornstarch
and whisk or beat with electric mixer till lumps disappear. Add
to hot chocolate mixture.
- Cook for 10 minutes, or until mixture
comes to a boil, stirring constantly.
- Remove from heat. Stir in vanilla. Serve
warm or chilled.
