 CHOCOLATE PUDDING
 


(Yields eight servings)

2 (1-ounce) squares of Unsweetened chocolate
3 ½ cups skim milk, divided
½ cup sugar
¼ tspn salt
2 tspns Just Whites
1 ½ tblspn cornstarch
2 tspns vanilla extract

  1. Melt chocolate in a heavy saucepan over low heat.

  2. Gradually add 3 cups milk, sugar and salt, stirring constantly with a wire whisk. Cook over medium-high heat until rolling boil, stirring constantly for approximately 7 minutes.

  3. Add Just Whites to remaining ½ cup (warm) milk and let sit for 2 minutes or so. Add the cornstarch and whisk or beat with electric mixer till lumps disappear. Add to hot chocolate mixture.

  4. Cook for 10 minutes, or until mixture comes to a boil, stirring constantly.

  5. Remove from heat. Stir in vanilla. Serve warm or chilled.
