 VIENNESE BROWNIES
 


(Yields 16 servings)

¼ cup Just Whites ½ cup flour
½ cup warm water 1/3 cup unsweetened cocoa
2 ounces unsweetened ¼ tspn baking powder
chocolate (2 squares) ¼ tspn salt
2 tblspns canola oil Vegetable cooking spray
1 cup sugar 2 tspns sifted
2 tspns vanilla extract powdered sugar

  1. Preheat oven to 350°F.

  2. Whisk Just Whites with warm water in a medium- sized bowl; let stand 2 minutes to allow powder to absorb liquid.

  3. Place semi-sweet chocolate squares in a small glass bowl with the oil and melt in the microware (or in a double boiler on the stove top).

  4. Whip egg white mixture with an electric mixer, until soft peaks form, gradually adding sugar. Add vanilla.

  5. Combine flour, cocoa, baking powder and salt in a separate bowl. Blend thoroughly. Fold in the egg white-sugar mixture, and the melted chocolate mixture, stirring until just moist.

  6. Pour batter into an 8-inch square baking pan Coated with vegetable cooking spray.

  7. Bake at 350° for 25-30 minutes, or until a wooden pick comes out clean. Let stand to cool and sprinkle with sugar.
